Whipped Ricotta

I believe this is a rotating dish on iggy’s menu, and this particular preparation was topped with sugar snap peas, miso butter, apple mint and lemon. It was a winner. These seemingly random ingredients worked incredibly well with the perfectly whipped ricotta- the flavors were different and well balanced- the miso butter in particular was delicious and not overly rich. The sourdough toast itself was also fabulous. I’d return to try any variant on this dish that the chef rolls out.
